OATMEAL SOUP 
1 lb. ground beef
1 (46 oz.) can tomato juice (or canned tomatoes)
2 1/2 c. water
1 tbsp. instant beef bouillon
1/2 tsp. salt
1/4 tsp. pepper
1 pkg. (10 oz.) green beans, English peas, chopped broccoli frozen vegetables
med. potatoes, unpeeled & cubed
3 lg. carrots, scraped & sliced
1 med. onion, chopped
1 c. sliced fresh mushrooms (or 1 can)
1/2 c. quick cooking oats, uncooked
1 clove garlic, minced
2 tsp. dried whole oregano

Brown meat and drain. Add remaining ingredients, bring to a boil, cover, reduce heat and simmer for 1 hour, stirring occasionally.

Makes 4 quarts.

Hint: As a further time saver, I brown ground beef when I bring it home and freeze it in 1 pound packages. This keeps preparation time at slightly more than 1 hour.
