VEGETABLE SOUP 
1 onion, sliced
2 tbsp. butter
1 c. carrots, diced
1 c. potatoes, diced
1 c. celery, diced
1 c. cabbage, shredded
5 c. boiling water
1/2 c. tomato juice
1 tbsp. salt
1/4 tsp. pepper

Add onion to butter and brown in small skillet. Add vegetables to boiling water and strained tomato juice. Add browned onions and other seasonings. Let simmer about 1 hour. Any desired combination of vegetables may be used.
