BASQUE POTATO SOUP 
1 lb. Italian sausage, sliced
1/2 c. onion
2 cans (1 lb. each) tomatoes
4 potatoes, pared and diced (6 c.)
1/4 c. chopped parsley
1 c. diagonally sliced celery
2 tbsp. chopped celery leaves
1 1/2 c. water
2 beef bouillon cubes
1 bay leaf
1 tbsp. salt
1/2 tsp. dried thyme
1/4 tsp. pepper
1 tbsp. lemon juice

In big saucepan or kettle, brown sausage. Add onion, cook 5 minutes, and add remaining ingredients. Bring to a boil, reduce heat and simmer uncovered 40 minutes or until potatoes are tender. Serves 6.
