SOPAPILAS 
2 c. flour
1 1/2 tsp. sugar
1 1/2 tsp. baking powder
3/4 tsp. salt
1 tbsp. shortening
3/4 c. milk
2 c. vegetable oil for frying
Powdered or reg. sugar for garnish

Mix first 4 ingredients in a medium bowl with pastry blender. Cut in shortening. Stir in milk until blended and dough forms a ball. Divide in half. Shape each piece into a ball. Flatten into 1 inch rounds. Let stand for 10 minutes to allow dough to relax. On lightly floured board, roll half of dough to 12 x 8 inch rectangle. Let rolled dough stand 10 minutes. With sharp knife, cut dough into 2 inch squares. Repeat with remaining dough, or remaining dough may be wrapped with plastic and refrigerated overnight. Heat 1 inch of oil in a 1 1/2 quart saucepan over medium-high heat. Carefully add 3 to 4 squares to oil at a time. Brown and turn. Fry approximately 30 seconds. Remove and drain on paper towels. Dust with sugar and serve.
