GRANOLA WITH DRIED FRUIT | |
6 c. quick cooking oatmeal 2 c. flaked coconut 1 c. sunflower seeds 2/3 c. sliced almonds 2/3 c. chopped walnuts 1/2 c. sesame seeds 2/3 c. honey 1/2 c. butter 1/2 c. brown sugar 1 tsp. salt 3 tsp. vanilla 1 c. raisins 1/2 c. chopped dates 1/2 c. chopped dried apples 1/3 c. chopped dried apricots 1/3 c. chopped dried pineapple Mix first 6 ingredients in a large bowl. Transfer to 2 lightly buttered 13 x 9 inch pan and heat for 20 minutes in 300 degree oven, stirring often. Meanwhile, mix honey, butter, sugar and salt in pan over medium heat or in microwave until sugar dissolves. Stir in vanilla. Drizzle syrup mixture over toasted mix and toss to coat evenly. Return to oven for 10 minutes. Mix in dried fruit and heat about 5 minutes more. Cool. Store in airtight container. Makes about 1 gallon. |
