RHUBARB CUSTARD PIE | |
4 c. rhubarb, cut in 1/2" pieces 2 eggs 1/3 c. flour 1 1/2 c. sugar 1 tbsp. butter 3 tbsp. milk Unbaked 9" pie crust 2/3 c. all purpose flour for crumb mix 1/3 c. light brown sugar for crumb mix 1/3 c. butter for crumb mix Place rhubarb in 9" pastry lined pan. Mix eggs, milk, flour and sugar together. Pour over the rhubarb. Dot filling with butter. Sprinkle with crumb mixture made from the flour, brown sugar and butter mixed together with a fork. Bake in hot oven at 425 degrees for 40 to 45 minutes or until a knife comes out clean. |
