KAFTA ON SKEWERS (MEATBALLS ON
SKEWERS)
 
2 lb. ground beef or lamb
3/4 c. chopped parsley
1 c. chopped onion
1 1/2 tsp. allspice
1 1/2 tsp. salt
1/2 tsp. black pepper

Mix all ingredients well and knead for a few minutes. Ice water may be added to soften the mixture. Form meatballs and place on skewers. Barbecue on grill, being careful not to over cook or they will be too dry. Onion, green pepper and cherry tomatoes may be added on skewers before grilling if desired. Cooking time is 10 to 15 minutes. Serves 6.
