FRUIT WHIPPED CREAM DRESSING 
3 tbsp. butter
3 tbsp. flour
1/3 c. sugar
1/8 tsp. salt
1/4 c. lemon juice
1 tbsp. frozen orange juice concentrate
1/3 c. pineapple juice (from canned chunks/tidbits)
2 egg yolks, slightly beaten (may substitute whites or 1 whole egg)
1/2 c. whipping cream

Melt butter in top of double boiler. Stir in flour, sugar and salt. Add juices gradually. Cook over boiling water, stirring constantly, until mixture thickens. Stir small amount of hot mixture into egg yolks, stirring that into rest of hot mixture. Stir 2 minutes. Chill, covered. Stir in whipped cream and serve.
