STRAWBERRY TARTS 
1 c. butter, softened
2 1/2 c. flour
8 oz. pkg. cream cheese
Strawberry preserves
2 eggs
1 c. sugar
1 sm. pkg. shredded coconut

Mix 1 cup butter, flour and cream cheese to form a dough. Press a small amount into small tart tins. Fill with about 1/2 teaspoons of strawberry preserves.

Mix 2 eggs, 1 cup sugar and coconut. Place a small amount of this mixture on top of the preserves. Bake at 375 degrees for about 15-20 minutes. Cool in pan, then remove.
