ITALIAN BROCCOLI CASSEROLE 
2 (10 oz.) frozen cut broccoli
2 beaten eggs
1 can condensed Cheddar cheese soup
1/2 tsp. oregano, crushed
1 (8 oz.) can stewed tomatoes, cut up
3 tbsp. grated Parmesan cheese

Cook broccoli in unsalted water 5-7 minutes or until tender, drain well. Combine eggs, soup, oregano. Stir in tomatoes and broccoli, turn into 6x10x2 inch baking dish. Sprinkle with Parmesan cheese. Bake uncovered at 350 degrees for about 30 minutes or until completely heated. Serves 6-8.

Not original but a long-time family favorite.
