MANDARIN ORANGE SALAD 
1/4 c. oil
1/8 c. white vinegar
2 tsp. honey
1/8 tsp. salt
1/2 tsp. tarragon
1/8 tsp. pepper
6 c. torn Romaine lettuce or 6 c. torn spinach, ribs removed
1 can mandarin orange segments, drain
3 scallions or 1 lg. red onion, slice
1/2 c. chopped fresh parsley

Mix first seven ingredients the night before. NOTE: instead of mixing dressing, you can use 1 cup Italian dressing adding 3 teaspoon honey and mixing well. Put into refrigerator until ready to use, preferably overnight. Shake well before using. Pour dressing over salad and toss. Put in 1/2 cup sliced almonds if desired.
