GREAT GRANOLA | |
6 c. rolled oats 1/2 to 3/4 c. vegetable oil 6 c. nuts and seeds (peanuts, sunflower seeds, chopped almonds, walnuts, pecans, etc.) 3 eggs 1-2 c. honey, molasses, or syrup 3 tbsp. vanilla extract 2 tsp. (or less) salt (optional) Cinnamon, nutmeg, other spices to taste 3 c. (or more) raisins and other chopped dried fruits In a large bowl, stir oil into oats to coat. Stir in nuts and seeds. Bake at 250 degrees in flat pan, stirring occasionally, until nuts are baked (30-45 minutes). Meanwhile, beat eggs in large bowl. Add honey, molasses or syrup. Add vanilla and salt and spices and stir well. Remove oat mixture and stir into egg/honey mixture until coated. Return to baking pan for about 20 minutes more. Remove from oven. Let cool until crisp. Add raisins and other dried fruits. |
