CHICKEN SESAME SALAD 
Boned, skinless chicken breasts
Rice sticks (Maifun)
Iceberg lettuce
1 c. sliced celery
2 whole green onions, chopped
1 c. water chestnuts
Sesame seeds
1/2 - 3/4 c. slivered almonds
2 (11 oz.) cans mandarin oranges

DRESSING:

1/2 tsp. salt
Pepper
1/4 c. oil (include a few drops of sesame oil)
1 tbsp. parsley
2 tbsp. sugar
2 tbsp. vinegar or more if you use rice vinegar
Dash of Tabasco

With Chinese foods in grocery store.

Toast almonds. Saute sliced chicken breasts in oil with a few drops sesame oil, salt, and pepper. Prepare rice sticks as per package (you can use less oil). Drain water chestnuts and mandarin oranges. Combine all ingredients; toss. Add dressing before serving. You will need only 1/3 package or slightly more rice sticks. Adjust dressing ingredients to suit your taste!
