ZESTY OIL-FREE SALAD DRESSING 
1/2 c. evaporated skim milk
2 tbsp. cider or wine vinegar
1 tbsp. lemon juice
1/2 c. tomato sauce
1 tsp. chopped onion
1 tsp Dijon mustard
1/4 tsp. lite salt (opt.)
1/4 tsp. ground pepper
2 tsp. finely chopped parsley

Combine all the ingredients in a blender. Process until mixed thoroughly. Serve on your favorite salad ingredients.

Yields: 1 1/2 cups (serves 6).

Per Serving: 0.23 mg fat; 28.6 calories; 1.8 g protein; 0.17 mg cholesterol; 3.2 g carbohydrates; 26.3 mg sodium.
