MANDARIN ORANGE, CASHEW SALAD 
2 tbsp. red wine vinegar
2 tbsp. strawberry jam
1/3 c. salad oil
Lettuce
Tomatoes
3/4 c. unsalted cashews
Sliced black olives
Celery
2 cans mandarin oranges

In large bowl, mix lettuce, sliced tomatoes, cashews, drained black olives, drained oranges, sliced celery.

In separate bowl, with wire whisk, blend vinegar and jam. Add oil in thin stream, blending well. Add dressing to salad right before serving. Mix well, coating all ingredients.
