KAUAI CHICKEN 
3 lb. chicken pieces
1/8 tsp. corn starch

MARINADE:

1/3 cup soy sauce
1/3 cup sugar
1/3 cup brown sugar
1/3 cup Hoisin sauce
2 cloves chopped garlic

Mix marinade ingredients until sugar is dissolved. Place chicken in bowl and pour on marinade making sure to coat all the pieces. Let sit in refrigerator for at least 30 minutes - overnight is best.

Preheat oven to 325°F.

Place on wire rack to bake catching drips in foil lined pan. Bake at 325°F for 1 hour. Baste and turn half way through.

For sticky gooey wings: Reduce cooking time to 45 minutes.

After basting simmer remaining marinade on stove top adding cornstarch as a thickening agent. Reduce to the perfect "goo" state. When the wings are done cooking place them in a bowl and pour the "goo" over them. Mix to coat.
