LEMON BROCCOLI 
1 1/2 lbs. fresh broccoli
1 tsp. grated lemon rind
1/8 tsp. salt
1/8 tsp. pepper
Lemon rind curls (optional)

Trim off large leaves of broccoli, and remove tough ends of lower stalks. Wash broccoli thoroughly, and cut into spears. Arrange spears in a vegetable steamer over boiling water. Cover and steam 5 minutes or until crisp-tender. Drain; transfer to a serving platter. Sprinkle with grated lemon rind, salt, and pepper. Garnish with lemon rind curls, if desired.

Makes 6 servings.
