ORANGE MINT ICE | |
4 c. fresh orange juice (about 8 lg. oranges) 1 1/3 c. sugar 1/2 c. fresh lemon juice 1 c. loosely packed fresh mint Fresh mint sprigs Bring first 3 ingredients to boil in heavy medium saucepan, stir frequently. Pour into bowl. Add mint leaves. Cool to room temperature. Cover and refrigerate overnight. Strain orange mixture, discarding mint. Process in ice cream maker according to instructions. Freeze in covered container, soften slightly before serving. Place a scoop of iced orange mixture in each of the 8 halves of just squeezed oranges, to be served in the orange. Slice a small section from bottom of each orange to prevent rolling on saucer. Freeze ice mixture in oranges. Soften slightly prior to serving with fresh mint sprig. Serves 8-12. |
