CRANBERRY BREAD | |
2 c. flour 1 c. sugar 1/2 tsp. baking soda 1/4 tsp. ginger 1 1/2 tsp. baking powder 1/2 tsp. salt 1 egg, well beaten 1/2 c. orange juice 2 tbsp. melted butter 2 tbsp. hot water 1 c. pecans 1 1/2 c. cranberries, cut in half Sift together the first 5 ingredients. Mix salt, eggs, orange juice and melted butter. Add dry ingredients and hot water; mix well. Add nuts and cranberries. Blend dough thoroughly. Bake in a well-greased loaf pan in a moderate 350 degree oven for 1 hour and 10 minutes. Remove from pan and wrap in wax paper while still hot. Put in refrigerator at once. When cold, unwrap. |
