APPLESAUCE ZUCCHINI CAKE
(HEALTHY!)
 
1 cup brown rice syrup
1/2 cup (2 parts canola oil and 1 part safflower oil)
3/4 cup applesauce
2 eggs
1 tsp. vanilla extract
1 1/2 cups shredded zucchini squash
1 cup seedless raisins
2 cups whole wheat flour
1/4 cup wheat bran
1/2 cup unhulled sesame seed
2 tsp. baking soda
1/2 tsp. ground nutmeg
1 tsp. cinnamon
1/4 tsp. ground cloves

Combine all ingredients together. Spread into 9x13-inch pan prepared with non-stick cooking spray.

Bake at 350°F for 30 minutes or until knife comes out clean.
