SPINACH STUFFING | |
2 slices white bread, cubed 1/2 stack Hi Ho crackers, crushed 1 egg, beaten 1/2 (16 oz.) pkg. fresh spinach 1/4 c. mushrooms (fresh), diced 1/2 c. grated Cheddar cheese 3 tbsp. butter 1 sm. onion, diced 1 clove garlic, diced 1 tbsp. Worcestershire sauce Salt and pepper In large bowl, put bread and cracker crumbs. Mix in egg. Saute onions, garlic, and mushrooms in butter until onions are soft. Add Worcestershire sauce. Cook spinach (drain, not well). Chop and add to crumbs. Add cheese, salt, and pepper (to taste). Cook in foil for 30 minutes at 350 degrees. Great as stuffing for pork roast or small chicken. Makes approximately 2 cups or 4 servings. |
