HAM SAUSAGE AND RICE MEDLEY 
1 lb. fresh ham sausage
2 c. cooked rice
1/2 c. onion, chopped
1/4 c. green pepper, chopped
1 tsp. parsley flakes
Salt, to taste
1/4 tsp. pepper
1/4 tsp. celery salt
Pinch of garlic powder
1/4 oz. can mushroom pieces, drained
1 c. grated cheddar cheese

In medium skillet over low heat, cook and crumble sausage until browned. Drain. Stir in onion and green pepper, saute about 2 minutes. Add rice and mushrooms. Sprinkle with parsley flakes, salt, pepper, celery salt, and garlic powder. Mix well. Turn mixture into oven proof serving dish. Cover with grated cheese. Bake at 350 degrees about 15 minutes or until cheese is melted. 6-8 servings.

For saucy rice, add 1 (8 ounce) can tomato sauce, turn into casserole dish and bake 30 minutes at 350 degrees. Add cheese the last 10 minutes.
