APRICOT OR PLUM DUMPLINGS 
1 c. white flour
1/2 c. cottage cheese
1 egg
5-6 apricots or plums
White sugar
1 1/2 c. bread crumbs
1/3 c. butter

Mix flour, cottage cheese and egg together to make a soft dough. Knead for 1 minute on floured surface. Let dough rest. Wash, seed, and dry fruit. Cut dough into 5-6 equal sections. Flatten dough into circles with floured hands.

Fill center of fruit with sugar and wrap dough around fruit and seal all edges completely. Heat water to boiling in large kettle. Drop gently the dumplings into boiling water. Make sure dumplings keep moving in water so they don't stick to bottom of kettle for first 3-4 minutes. Boil dumplings for 20 minutes.

While dumplings cook, melt butter in fry pan. Pour in bread crumbs. Sprinkle lightly with 1-2 teaspoons sugar. Heat buttered crumbs thoroughly. Remove cooked dumplings from water and roll in buttered bread crumbs.
