CHOCOLATE NUT ZUCCHINI BREAD | |
3 eggs 1 c. oil 1 tsp. salt 1/4 tsp. baking powder 2 oz. baking chocolate (squeeze kind) 2 c. grated or shredded, peeled and seeded zucchini 1 c. chopped nuts 1 tsp. vanilla 1/2 c. chocolate chips (or more) 1/2 c. maraschino cherries, chopped 1 tsp. baking soda 1 1/2 c. sugar 3 c. flour 1 tsp. cinnamon Beat eggs until lemon colored; then beat in sugar, oil, and liquid chocolate. Add remaining ingredients, mixing well. Put in greased and floured bread pans. Bake at 350 degrees for 1 hour or until toothpick comes out clean. Cool on rack 10 minutes and remove from pans and wrap immediately in waxed paper. Finish cooling on racks. Freezes very well. |
