INDIVIDUAL CHEESECAKES 
2 (8 oz.) pkgs. cream cheese
3/4 c. sugar
1 tbsp. lemon juice
1 tsp. vanilla
2 eggs
Vanilla Wafers (about 40)
Pie filling

Mix all ingredients except wafers with electric mixer until fluffy.

Use individual foil muffin cups. Place vanilla wafer in bottom. Put 1 tablespoon cheese mixture on top of each wafer. Place cups on cookie sheet and bake at 350 degrees for about 15 minutes.

These can be frozen for weeks. When ready to serve, put a "dab" of cherry or blueberry pie filling on top of each. Makes 40.
