MOTHER'S LEMON PIE 
Lemon Pie Filling:

5 eggs, divided and yolks beaten
1 c. milk
1 c. sugar
2 lemons, juice and rind
3 tbsp. flour
1 tbsp. melted butter

Heat oven to 400°F. Combine ingredients except egg whites in a bowl. Pour in baked pie shells and bake for 10 minutes: remove from oven. Cover with meringue made of whites and sugar.

Makes 2 pies. Half the ingredients makes one 8-inch pie.

Meringue:

2 egg whites
2 tbsp. water
1/3 c. sugar, (2 tbsp. sugar for each egg white)
1/3 tsp. baking powder
1/3 tsp. cornstarch

Beat egg whites and water together; Sift together, sugar, baking powder and cornstarch. Mix dry ingredients together, and add gradually to egg whites. Beat until stiff but not dry. Spread over baked lemon pie and bake in 350°F oven for 15 to 20 minutes or until golden brown.
