HONEY CARROT AMBROSIA 
4 c. coarsely grated carrots
1/4 c. fresh lemon juice
1/2 c. flaked coconut
2 to 3 tbsp. honey
1/4 tsp. salt
1/2 c. sour cream (or plain yogurt)
1/2 c. raisins

Combine carrots and lemon juice, add coconut. Blend honey, salt and sour cream; toss with carrots. Stir in raisins. May put in salad bowl with lettuce leaves around side and add coconut to top for garnish. Serves 6.
