ONION SOUP 
6 tbsp. butter
6 onions, peeled and sliced
1 tbsp. flour
Salt and pepper to taste
2 qt. liquid - homemade stock or canned consomme or broth
1 c. dry white wine
6 slices buttered French bread
2 tbsp. Parmesan cheese

Melt butter in large pot. Add onions, cover and cook 20 minutes, stirring now and then. Uncover and stir in flour, salt, and pepper. Add the liquid and cook uncovered over a low flame for 30-40 minutes. To serve - butter the bread and sprinkle with Parmesan cheese. If you have oven proof soup bowls, place the bread on top of soup and toast under broiler until bread is brown. If this isn't convenient, toast the bread and place on soup at the table. Serves 6.
