SCOTTISH SHORTBREAD 
1 c. butter
2 c. sifted all purpose flour
1/2 c. sifted confectioner's sugar
1/4 tsp. salt

Cream butter. Sift together next 3 ingredients and blend into butter. Pat stiff dough into an ungreased 9 x 13 inch pan, or shallow glass casserole. Press edges down. Pierce with fork through the dough every half inch. Bake 25 to 30 minutes. Cut into squares while warm. Don't overcook.
