BUBBA'S SMOKED HAM | |
1 center cut ham 2 liter Classic Coke 1 sm. can sliced pineapple 20 whole cloves 1/2 c. red cherries Liquid brown sugar Outdoor smoker with water pan Toothpicks Bulb basting syringe 20 lb. bag of charcoal Small pieces of oak or hickory wood Light smoker using about 7 lbs. of charcoal (not self lighting). After fire goes down and coals are red/gray, put water pan on and fill with Coke. Place slits on top of ham and insert whole cloves. Attach sliced pineapple and cherries with toothpicks. Place on lower grill just above pan filled with Coke. Once in place, pour 1 cup liquid brown sugar over ham, cover and leave. Every time you add charcoal, also add some wood pieces, and uncover ham and baste with juices from pan. Try to keep fire in mid warm range on indicator. Depending on size, should take 6-7 hours. One half hour before removing pour another cup of brown sugar over the ham. |
