LEMON SQUARES | |
CRUST: 1/2 c. butter, softened 1/2 tsp. baking soda 1/2 c. sugar 1 c. flour 1/2 c. coconut 1/2 c. brown sugar 20 soda crackers, crushed FILLING: 2 eggs 1/4 c. lemon juice 1 c. sugar 2 tbsp. water 1 tbsp. lemon peel Blend butter into soda and flour. Add sugars, cracker crumbs, and coconut. Mix well. Remove 3/4 cup and reserve. Press remaining crumbs into ungreased 9 x 13 inch pan. Mix filling ingredients together. Cook until mixture thickens. Cool slightly, then pour on top of unbaked crust. Sprinkle reserved crumbs on top. Bake at 350 degrees for 30 minutes. |
