BANANA BREAD 
1 c. flour
2 tsp. baking powder
1/2 tsp. salt
3/4 c. super fine sugar
1/2 c. (1 stick) softened butter
1 egg, beaten
1/2 tsp. vanilla extract
2 lg. ripe bananas, peeled & mashed

1. Preheat oven to 350 degrees. Sift together the flour, baking powder, nutmeg and salt. In large bowl, cream the sugar and butter until light and fluffy, then add the beaten egg and vanilla. Mix thoroughly. Slowly add the flour mixture, a few spoonfuls at a time, mixing well after each addition. Stir in the mashed bananas, combine thoroughly.

2. Pour the dough into a greased 9"x5" loaf pan and distribute it evenly. Bake for 1 hour or until a toothpick inserted in the center comes out clean. Cool the bread on a wire rack before removing it from the pan. Yield: 1 loaf.
