BROCCOLI RICE QUICHE 
1 1/2 c. rice, cooked
2/3 c. Sharp cheese, grated
3 eggs, slightly beaten
Salt to taste
1/4 c. milk or cream
3/4 c. fresh mushrooms, sliced
1 1/2 c. raw broccoli florets, cut in 1 inch pieces
1/8 tsp. pepper

Combine rice, 1/3 cup cheese, 1 egg and salt to taste. Mix well and press firmly into 9-inch pie pan which has been sprayed with non-stick coating. Combine 2 eggs, milk, mushrooms, broccoli, pepper and salt to taste. Mix well. Spoon into crust. Bake at 375 degrees for 20 minutes. Remove from oven and sprinkle remaining 1/3 cup cheese over quiche. Return to oven and bake 10 minutes longer. Yields 3 generous servings.
