PUMPKIN BREAD BAKED IN CAN 
3 c. sugar
3/4 c. water
1 1/2 tsp. salt
3 1/2 c. flour
Chopped nuts to taste (optional)
1 c. vegetable oil
1 (16 oz.) can cooked pumpkin
2 tsp. nutmeg
2 tsp. baking soda
4 eggs

In large bowl combine sugar, oil, eggs, water and pumpkin. Mix well. Sift together salt, nutmeg, flour, and baking soda. Stir into pumpkin mixture until smooth. Fold in nuts, if desired. Fill 4 grease and floured 1 pound coffee cans half full. Bake at 350 degrees for 1 hour. Makes 4 small loaves.
