PEANUT BUTTER AND OATMEAL
COOKIES
 
1 c. flour
1/2 tsp. baking soda
1/2 c. butter
1/2 c. peanut butter
1/3 c. sugar
1/3 c. brown sugar
1/2 c. shredded carrots
2 egg whites
1/2 tsp. vanilla
1 c. oatmeal

Cream butter and peanut butter; beat until fluffy. Add carrots, egg whites, and vanilla; beat well. Add dry ingredients; beat until combined. Stir in oatmeal. Drop by spoonful on greased cookie sheet. Bake at 375 degrees for 10 minutes. Makes about 48.
