CHERRY CUP CAKES OR MUFFINS | |
4 tbsp. butter butter 1/2 c. white sugar 1/2 c. brown sugar 2 well beaten egg yolks 1 c. pastry flour 1/4 tsp. baking powder 2 tbsp. maraschino cherry juice 2 well beaten egg whites 1 bottle maraschino cherries Pecans, ground fine Powdered sugar Cream together butter and white and brown sugar. Add well beaten egg yolks. Sift together pastry flour and baking powder. Add to the creamed mixture. Stir in cherry juice. Fold in well beaten egg whites. Butter tiny muffin tins. Sprinkle with finely ground pecans. Put 1 teaspoon batter in each prepared muffin tin, then a cherry, cover the cherry with a second teaspoon of batter. Sprinkle top with ground pecan meats and bake in a 400 degree preheated oven for 10 minutes. Roll muffins in powdered sugar while warm, let cool. Store muffins in tin box or can tightly covered, store for several days before using. May be frozen successfully. |
