CHICKEN SALAD IN CANTALOUPE
RINGS
 
3 tbsp. oil
1 tbsp. orange juice
1 tbsp. vinegar
1/2 tsp. salt
2 1/2 c. chicken or turkey, cooked & cubed
1 1/2 c. rice, cooked
3/4 c. celery, diced
3/4 c. seedless green grapes
1 (11 oz.) can Mandarin orange segments, drained
1 (8 oz.) can chunk pineapple, drained
3/4 c. mayonnaise
1/2 c. slivered almonds, toasted
1 cantaloupe, peeled, seeded & sliced into rings

In medium bowl. Combine oil, orange juice, vinegar and salt; blend well. Add chicken; stir to coat. In large bowl, combine celery, rice, grapes, oranges, pineapple and mayonnaise; blend well. Add chicken mixture to rice mixture; mix well. Cover and chill well. To serve, stir almonds into chicken mixture. Spoon chicken salad into cantaloupe rings. Serves 6.
