CHEDDAR FISH FLORENTINE 
2 (10 oz.) pkgs. of frozen spinach or cut broccoli
1 lb. mild white fish (roughy or sole for example)
1 tbsp. lemon juice
1 c. shredded cheddar cheese
1/4 c. dry bread crumbs
1/2 tsp. dill weed

Cover bottom of a 12x8 inch baking dish with spinach or broccoli. Top with fish. Sprinkle with lemon juice. Combine remaining ingredients and spoon over fish. Cover with aluminum foil and bake at 450 degrees for 15 to 20 minutes. Serves 4.
