NANA AUDRY'S RICE PUDDING 
3/4 cup rice, rinsed
1 cup heavy cream
3/4 cup sugar
6 cups milk
3 egg yolks
2 tbsp. vanilla

In a 3-quart pot, bring milk to a boil. Add rice. Return to a boil. Lower heat and simmer for 55 minutes, stirring often.

In a mixing bowl, combine remaining ingredients. Quickly mix into rice. Bring to a boil and boil for 1 minute.

Pour into bowl and cool. Pudding will thicken as it cools.
