CHICKEN-RICE CASSEROLE 
2 1/3 or 3 c. cut-up chicken
1 c. celery, cut up
2 tbsp. onion
1 1/2 c. Minute rice, cooked
3/4 c. Hellmann's mayonnaise
1 can cream of mushroom soup, undiluted
1 can cream of celery soup, undiluted
1 can mushrooms (optional)

Fry onions in butter until limp. Add celery. Mix all the rest of the ingredients and put in a greased oblong casserole. Add topping. Bake at 350 degrees for 1 hour.

TOPPING:

2 c. Special K cereal (out of box)
3 tbsp. melted butter

Can be made a day ahead but do not add topping until ready to bake.
