CARROT CAKE 
4 eggs
1 1/2 c. salad oil
1 tsp. baking powder
2 tsp. cinnamon
2 c. flour
2 c. sugar
2 tsp. baking soda
1/2 tsp. salt
3 c. finely grated carrots

Beat eggs, sugar, oil well. Add sifted dry ingredients. Blend. Fold in carrots and bake in 10 x 13 inch pan for 25 to 30 minutes.

ICING FOR CAKE:

1 (8 oz.) pkg. cream cheese
1 pkg. powdered sugar
2 tsp. vanilla
1 cube butter
1/2 c. chopped nuts

Cream butter, cheese. Add sugar, vanilla. Beat until smooth and creamy. Add nuts, spread on cake.
