OAT BRAN AND RAISIN COOKIES 
2 c. 100% oat bran, uncooked
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. ground nutmeg
1/3 c. honey
1/4 c. salad oil
2 egg whites
1 c. dark seedless raisins

Preheat oven to 350 degrees. Lightly grease cookie sheet.

In a large bowl, mix first 4 ingredients. In a small bowl, beat honey, oil, and egg whites until blended. Stir into the oat bran mixture until moistened. Fold in the raisins.

Drop dough by tablespoonfuls, about 2 inches apart, onto cookie sheet.

Bake about 15 minutes, or until edges are lightly browned. With metal spatula, remove cookies to wire rack to cool. Repeat until all dough is used, lightly greasing cookie sheet each time.

Makes about 2 dozen cookies. About 75 calories, negligible saturated fat, and 0 mg. cholesterol per cookie.
