OKRA EVANGELINE 
1 lb. fresh okra, sliced
1 stick butter
1/2 c. finely chopped onion
1/2 c. shredded ham, grate on coarse blade
1 clove garlic
Salt and pepper
Accent to taste
1 c. cooked rice
4 lg. tomatoes

Smother okra in the butter with onion, ham and seasonings. Hollow out the tomatoes while cooking okra. When cooked through, add rice and tomato pulp. Check for seasoning. Stuff tomatoes and bake 10 minutes at 400 degrees. Serves 4.

In those long winter months when tomatoes are not at their best, stir in about 3 to 4 canned tomatoes, chopped and partially drained. This makes a delicious casserole.
