POTATO CANDY | |
2 lbs. confectioners' sugar 1 med. white potato 1 sm. jar creamy peanut butter 1 c. chopped pecans (fine) Place unpeeled potato in pot of boiling water. Boil until tender. Let cool enough to handle and peel. Place peeled potato in a mixing bowl; add confectioners' sugar. Mix well. Believe it or not will be the consistency of dough. Roll out with rolling pin on a dusted with confectioners' sugar board. Spread with peanut butter. Sprinkle on nuts. Roll like a jelly roll. Wrap in wax paper and refrigerate for 1 hour before slicing into 1/2 inch slices. This candy is very sweet and can be stored for several days in refrigerator. |
