RED VELVET CAKE 
2 c. self-rising flour
2 c. sugar
3/4 c. Crisco
2 eggs
1 (1 oz.) bottle red food coloring
1 c. buttermilk

ICING:

1 box 10X sugar
1 (8 oz.) pkg. cream cheese
1 stick butter
1/2 c. pecans, chopped (optional)

Mix all ingredients together. Beat with mixer until well blended, about 2 minutes. Bake at 325 degrees. Makes 3 layers.
