MEXICAN RICE 
2 c. cooked white rice
1 c. sour cream
1/2 c. diced green chilies
1 c. shredded Monterey Jack cheese

Preheat oven to 350 degrees. Butter 1 quart baking dish. Mix all ingredients in bowl. Turn into dish. Cover and bake until cheese melts and rice is heated through, about 20 minutes. 4 servings.
