MICROWAVE LAZY DAY LASAGNA 
1 lb. lean ground beef or turkey
1 (32 oz.) jar spaghetti sauce
2 c. cottage cheese
1 egg, well beaten
1/2 c. Parmesan cheese, grated
1 tbsp. parsley flakes or fresh parsley
8 uncooked lasagna noodles
2 c. shredded Mozzarella cheese

Crumble meat in microwave colander, place on paper towels. Microwave 6 to 7 minutes on High, stirring once. Discard paper towels and grease. Put meat and spaghetti sauce in large bowl and microwave 5 minutes on High.

Mix Parmesan cheese, cottage cheese and egg. Pour 1 1/2 cups spaghetti sauce mixture in 9"x13" glass baking dish, spreading evenly. Place 4 noodles over sauce. Top with 1/2 the cheese egg mixture and 1/2 the shredded Mozzarella cheese. Spoon 1 cup spaghetti sauce mixture over the cheese, add 4 remaining noodles, cover with remaining cheese egg mixture. Then add balance of Mozzarella cheese. Finish with remaining spaghetti sauce mixture. Cover tightly with plastic wrap, except for a small opening in one corner. Microwave 15 minutes on High. Then 15 minutes on Medium. Allow to stand 10 to 15 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
