AUGRATIN POTATOES 
5 lbs. diced and cooked potatoes
1 1/8 c. butter (2 sticks & 2 tbsp.)
1 1/2 c. flour
1 1/4 qt. water
1 tbsp. salt
3/4 tsp. yellow food coloring
Sliced cheese, I use Velveeta and sharp cheese

Melt butter, add flour and stir until smooth. In another pan mix food coloring, salt and water and bring to a boil. Remove from heat, add flour and butter mixture. Return to stove and boil for 3 to 5 minutes. Turn heat to low, add sliced cheese and stir until melted. Pour potatoes into 9x13 pan, pour cheese mixture in and mix well. Bake at 350 degrees for 1 1/2 to 2 hours. Cool 20 minutes before serving.
