ZITI CASSEROLE 
2 1/2 tbsp. butter
1 tbsp. vegetable oil
3 oz. mushroom
2 c. broccoli
1/4 to 1/2 c. carrots
1/2 c. cheddar cheese
1/2 c. Parmesan cheese
1/2 lb. ziti, boiled & drained
1 c. half & half
1 1/2 tbsp. flour
1 c. walnuts

Melt 1/2 tablespoon butter, stir in mushrooms, saute then remove. Add 1 tablespoon oil, broccoli, carrots, stir fry 2 minutes. Add 2 tablespoons water, cover, cook 3 minutes until tender, drain.

Melt 2 tablespoons in saucepan on low heat. Whisk flour. Continue stirring slowly, add 1 cup half and half or light cream. Stir in 1/2 cup Parmesan and cheddar cheese. Stir 2 to 3 minutes until sauce thickens. Gently mix ziti, mushrooms, carrots, broccoli and walnuts in bowl. Add cheese sauce. Toss gently. Bake 25 minutes at 375 degrees in 2 quart covered baking dish.
