PUMPKIN MUFFINS 
3 eggs
2 c. & 1 tbsp. sugar
1/2 c. oil
1 c. solid packed pumpkin
2 1/4 c. flour
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. baking soda
1/2 tsp. salt
2 (3 oz.) pkg. cream cheese

Combine 2 slightly beaten eggs, 2 cups sugar, oil and pumpkin; mix well. Combine flour, spice, soda and salt separately. Make well in center of dry mixture. Pour in pumpkin mixture. Stir until moist (will be thick). Spoon 1/2 of mixture in 24 lined of greased muffin pans.

Combine cream cheese, 1 egg, 1 tablespoon sugar. Spoon in muffin pans. Spoon rest of butter on top of muffins and spread to edges. Before baking, combine 2 tablespoons sugar, 1/4 teaspoon pumpkin pie spice and pecans, optional. Sprinkle on top of each muffin. Bake at 350 degrees for 20-25 minutes.
